Pumpkin Seeds 3 Ways

It’s pumpkin season. Pumpkin spice lattes, pumpkin shaped candy, pumpkin flavored candles, and of course, pumpkin seeds. If you haven’t carved your pumpkins yet or saved the seeds but not sure what to do with them, try out one of these recipes below, or maybe all 3! Pumpkin seeds are filled with magnesium and fiber, which are both a great addition to your diet. If you tend to burn your pumpkin seeds, try roasting them first and seasoning them afterward. Directions: Preheat your oven to 375 degrees and prepare your seeds by cleaning them well and drying them out. From there, toss 2 cups of seeds in 2.5 teaspoons avocado oil and sea salt. Roast them on a parchment-lined baking sheet for 25-35 minutes, until they are golden brown. After taking them out of the oven, toss them in 1 of these 3 mixes and enjoy!

Sweet Curry: Toss toasted seeds in 2 teaspoons of curry powder and 2 teaspoons brown sugar.

Spicy Garlic: Toss toasted seeds in 1.5 teaspoons of garlic powder and 1/2 teaspoon cayenne pepper. Add salt to taste.

Cinnamon Sugar: Toss toasted seeds in 2 teaspoons brown sugar and 1 teaspoon cinnamon.
