Roasted Red Pepper Chili Recipe

All of this snow makes us want to cuddle up on the couch with a warm bowl of chili. One of our favorites, this Roasted Red Pepper Quinoa Chili from Fit Foodie Finds!

Make it yourself: place 1 cup uncooked quinoa and 2 cups water in a large pot and bring to a boil. While the quinoa is cooking, place one 12 oz. jar of roasted red peppers (entire jar-including liquid) in a blender and blend until puréed. Once the quinoa is boiling, add all remaining ingredients into the pot: puréed peppers, 1 chopped red pepper, 1/2 red onion chopped, 1 serrano pepper finely diced, 1 tbsp minced garlic, one 28oz. can crushed tomatoes, one 15oz. can northern white beans drained, one 15oz. can kidney beans drained, 3.5 tbsp chili powder, 1/2 tsp sea salt, 1 tsp cumin, 2 tsp garlic powder, and 2 tbsp maple syrup. Stir well, cover and cook on medium heat for 15 minutes. Then turn to low and let simmer for another 15 minutes. Enjoy topped with green onion! This serves 6-8 and is 295 calories per serving with 14 grams of protein. Doesn’t get much better than that!
